Fried Rice

  1. In a large pan or wok; fry onions and celery in oil until soft.
  2. Fry pork strips.
  3. Add cold rice and shrimp.
  4. Stir until hot.
  5. Season with salt, pepper and soy sauce.
  6. Make a light omelet with the eggs (I use Egg Beaters); roll and slice in thin strips. Place rice mixture on a platter or in a large bowl.
  7. Garnish with omelet strips, green onions, raisins, nuts and strips of lettuce. Serve hot, using more soy sauce if desired.
