Easy Chicken-Rice Divan
- 2 (10 oz.) pkg. frozen broccoli spears
- 1/2 c. grated Parmesan cheese
- 2 c. cubed cooked chicken or turkey
- 1 c. cooked rice
- 2 Tbsp. butter or margarine
- 2 Tbsp. all-purpose flour
- 1 c. milk
- 1 Tbsp. lemon juice
- 1 c. sour cream
- Cook broccoli according to package directions; drain.
- Arrange broccoli in a 12 x 7 1/2 x 2-inch dish.
- Sprinkle with half the Parmesan cheese; top with chicken or turkey.
- Season meat with salt and pepper; spoon rice over.
- Melt the butter or margarine; blend in flour.
- Add milk, all at once; cook and stir until bubbly.
- Cook 2 minutes more.
- Remove from heat.
- Stir in lemon juice; fold in sour cream.
- Pour sauce evenly over chicken; sprinkle with remaining cheese.
- Bake in a 400u0b0 oven for 15 to 18 minutes.
- Makes 6 servings.
