Mom’S Applesauce Muffins
- BATTER:
- 1/2 cup butter, softened
- 1 cup sugar
- 1 cup applesauce
- 2 cups all-purpose flour
- 1 egg, beaten
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 cup raisins
- CRUMB TOPPING:
- 1/2 cup butter, softened
- 3/4 cup all-purpose flour
- 3/4 cup quick-cooking oats, uncooked
- 1/2 cup brown sugar, packed
- 2 teaspoons cinnamon
- Combine butter, sugar, applesauce and egg. In a separate bowl, combine flour, baking soda, cinnamon, cloves and salt; stir into butter mixture just until moistened. Stir in raisins. Fill paper-lined muffin cups 3/4 full; sprinkle with crumb topping. Bake at 350 degrees for 25 to 30 minutes.
- Crumb Topping: Blend all ingredients until crumbly.
