Puffing Crab Or Chicken Casserole
- 10-12 slices bread, trim off crust ends
- 3 cups cooked crab/tuna/shrimp/chicken or turkey
- 1/2 cup onion, chopped
- 1/3 cup green pepper, chopped
- 1/2-3/4 cup mayonnaise
- 3 eggs
- 2 cups milk
- 1 can cream of chicken or mushroom soup, mixed with 1/2 can water
- 1 cup grated cheese
- paprika, salt and pepper to taste
- Line bottom of greased 9x13 pan with 1/2 the bread slices. In a dish combine the meat, onion, celery, peppers, mayonnaise and salt and pepper.
- Pour over bread.
- Place remaining bread on top. Beat eggs and milk together and pour over second layer of bread. Cover and refrigerate several hours or overnight.
- Before baking, pour soup over the top, sprinkle with cheese and paprika.
- Bake uncovered 1 hour 15 minutes at 350u0b0.
