Gingersnaps
- 3/4 c. shortening
- 1 c. sugar
- 1 egg
- 1/4 c. molasses
- 2 tsp. orange rind or orange flavoring
- 2 c. flour
- 1 tsp. ginger
- 1 tsp. cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. shortening
- 1 1/2 c. sugar
- 3 eggs
- 3 Tbsp. maraschino cherry juice
- 1 tsp. vanilla
- 1/2 c. well drained maraschino cherries, chopped
- 3 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 c. chopped nuts
- 1 c. chopped dates
- 1/2 c. coconut
- Cream sugar and shortening.
- Add eggs and beat well.
- Add cherry juice and vanilla.
- Stir together flour, salt and soda.
- Add to creamed mixture.
- Stir in coconut, nuts, dates and cherries. Drop by teaspoonfuls on a greased cookie sheet.
- Bake at 300u0b0 for 15 minutes.
- Makes 6 to 7 dozen.
