Peaches 'N' Cream Pie
- 3/4 c. all-purpose flour
- 3 oz. vanilla pudding
- 1/2 c. milk
- 1 egg
- 1 tsp. baking powder
- 1/4 tsp. salt
- 13 oz. can sliced peaches, drain and reserve juice
- 8 oz. cream cheese
- 1/2 c. sugar
- 3 Tbsp. peach juice
- 1 Tbsp. sugar
- 1/2 tsp. cinnamon
- Combine first 6 ingredients.
- Beat at medium speed until well blended.
- Pour into greased 9-inch pie pan.
- Place drained peaches on top of filling.
- Beat the cream cheese, 1/2 cup sugar and 3 tablespoons peach juice for 2 minutes.
- Spread on top of fruit. Combine the 1 tablespoon sugar and 1/2 teaspoon cinnamon and sprinkle over cream cheese mixture.
- Bake for 35 minutes at 350u0b0 until a light brown.
- Let cool.
- Serves 6.
