Moros Y Cristianos
- 3 tablespoons olive oil
- 1/2 cup chopped reduced-fat ham
- 1 cup chopped onion
- 3 garlic cloves, minced
- 1/2 cup tomato sauce
- 1 (14 1/2-ounce) can less-sodium, fat-free chicken broth
- 2 cups long-grain parboiled rice (such as Uncle Ben's)
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 1/2 teaspoon black pepper
- 2 (15-ounce) cans black beans, rinsed and drained
- 1 bay leaf
- 1/2 cup finely chopped green bell pepper
- Cilantro sprig (optional)
- Heat oil in a large Dutch oven over medium-high heat. Add ham; saute 1 minute. Add onion and garlic; saute 2 minutes. Stir in tomato sauce and broth; bring to a boil. Add rice and next 5 ingredients (rice through bay leaf); bring to a boil. Cover, reduce heat, and simmer 20 minutes, stirring occasionally. Discard bay leaf. Sprinkle each serving evenly with bell pepper. Garnish with a cilantro sprig, if desired.
