Sweet-And-Sour Meatballs With Yellow Rice
- 1 lb. ground chuck
- 1/3 c. fine, dry bread crumbs
- 2 eggs whites, lightly beaten
- 3 Tbsp. minced fresh parsley
- 2 Tbsp. minced onion
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
- vegetable cooking spray
- 1/2 c. chopped onion
- 1 (14 1/2 oz.) can no-salt added whole tomatoes, drained and chopped
- 1 c. no-salt added tomato sauce
- 1/2 c. jellied cranberry sauce
- 1 Tbsp. lemon juice
- 1/8 tsp. ground red pepper
- 3 c. cooked yellow rice
- Combine first 8 ingredients in a medium bowl; stir well.
- Shape mixture into 24 (1-inch) meatballs.
- Place on a rack in a roasting pan coated with cooking spray.
- Bake at 350u0b0 for 25 minutes.
- Drain and pat dry with paper towels.
