Maple-Molasses Barbecue Sauce
- Vegetable cooking spray
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1/2 cup plus 1 tablespoon maple syrup
- 1/2 cup water
- 1/4 cup low-sodium soy sauce
- 1/4 cup molasses
- 3 tablespoons cider vinegar
- 1 teaspoon dried crushed red pepper
- 1 teaspoon peeled, minced gingerroot
- 1/4 cup creamy reduced-fat peanut butter
- Coat a medium saucepan with cooking spray; place over medium heat until hot. Add onion and garlic; cook, stirring constantly, 3 minutes or until tender.
- Combine cornstarch and next 7 ingredients; stir well. Add to onion mixture; bring to a boil. Cook 3 minutes, stirring frequently. Add peanut butter; cook, stirring constantly, 2 minutes or until peanut butter melts. Use to baste while cooking and/or to serve with chicken or pork.
