Peppernuts
- 3 eggs
- 1 1/2 c. sugar
- 1 c. shortening
- 4 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1 1/4 tsp. baking soda, dissolved in 1 c. sour milk
- 1 tsp. lemon extract
- 1/2 tsp. nutmeg
- Beat together eggs, sugar and shortening in large bowl at high speed until creamy, about 3 minutes.
- Turn mixer to low speed. Sift all dry ingredients, except soda, together.
- Add gradually to creamed mixture alternately with sour milk to which soda has been added.
- Increase to medium speed 1 to 2 minutes when mixture becomes stiffer.
- If possible, allow dough to stand in cool place to stiffen before rolling and cutting.
- May decorate with sugars or raisins.
- Bake at 350u0b0 for 12 to 15 minutes on greased cookie sheets.
