Tacos And Black Beans
- 4 cans black beans
- 4 c. white rice
- 3 to 4 slices bacon
- 1 medium onion
- 1 medium bell pepper
- 1 pkg. taco shells (18)
- 1 lb. hamburger
- 1 pkg. taco seasoning
- 1 (8 or 12 oz.) Cheddar cheese
- 2 to 3 medium tomatoes
- small amount chopped lettuce
- 1 jar hot or medium El Paso picante sauce (optional)
- Open cans of black beans into a saucepan and add a little salt and pepper.
- Put on low heat.
- In a frypan, chop bell pepper, onions and bacon.
- Saute.
- Drain and put in the black beans and continue on low heat.
- Clean frypan and brown hamburger.
- Drain the hamburger and follow directions on taco seasoning.
- While that is cooking, cut tomatoes into small pieces.
- Shred cheese and chop or slice lettuce.
- Place taco shells in a 9 x 13-inch pan with 3 to 4 shells each row.
