Chicken Tikka(Curried Chicken Grilled)
- 2 1/2 to 3 lb. chicken
- 2 1/4 c. bread crumbs
- 1 c. chopped onions
- 1/2 c. coarsely chopped fresh tomatoes
- 1/4 c. finely chopped onions
- 1/4 c. chopped fresh coriander
- 1 Tbsp. chopped ginger
- 1/2 tsp. chopped garlic
- 1 tsp. garam masala
- 1 tsp. ground cumin
- 1/8 tsp. hot red pepper, ground
- 1 Tbsp. salt
- 1 whole egg
- 1/4 c. oil
- Skin, bone and grind chicken.
- Debone chicken and discard all but meat of chicken.
- Discard wings.
- Chop meat up and grind if possible.
- Combine chicken, bread crumbs, onions, tomatoes, coriander, ginger, garlic, garam masala, cumin, red pepper, salt and egg in deep bowl.
- Mix well in bowl.
- Divide into 8 equal parts in pan.
- Heat oil in pan and deep fry chicken mixture to form cutlets.
- Fry on each side until brown.
