Possin A La Nicoise
- 2 lb. fish fillets
- 4 small tomatoes, peeled and chopped (fresh or canned)
- 1 clove garlic, chopped and mashed
- 1 Tbsp. minced parsley
- 1/4 tsp. dried oregano
- 2 Tbsp. butter
- 5 tsp. olive oil
- salt and pepper to taste
- dash of white wine (optional)
- sliced fresh mushrooms (optional)
- Coat a baking dish with 1 teaspoon olive oil.
- Place fish fillets in a single layer. Season with salt and pepper.
- Add garlic, parsley and oregano to the mashed tomatoes.
- Add wine and mushrooms, if desired. Spread the mixture on the fish and sprinkle the remaining 4 teaspoons olive oil over the fillets.
- Dot with bits of
- 2 tablespoons butter.
- Bake at 350u0b0 for 20 minutes, more or less depending on thickness of fish.
- Serves 6.
