Possin A La Nicoise

  1. Coat a baking dish with 1 teaspoon olive oil.
  2. Place fish fillets in a single layer. Season with salt and pepper.
  3. Add garlic, parsley and oregano to the mashed tomatoes.
  4. Add wine and mushrooms, if desired. Spread the mixture on the fish and sprinkle the remaining 4 teaspoons olive oil over the fillets.

  7. Bake at 350u0b0 for 20 minutes, more or less depending on thickness of fish.
  8. Serves 6.
