Swedish Meatballs
- 1 c. dried bread crumbs
- 1 c. warm heavy cream
- 1 lb. beef
- 1/2 lb. veal
- 1/3 lb. pork
- 1 c. milk
- 4 egg yolks
- 4 Tbsp. minced onion
- 2 1/2 tsp. salt
- 2/3 tsp. pepper
- 1/4 tsp. allspice
- 4 Tbsp. fat
- 4 Tbsp. flour
- 2 cans beef broth
- Grind beef, veal and pork together 3 times.
- Soak crumbs in warmed cream.
- Combine crumbs and meat.
- Mix thoroughly.
- Add milk. Add egg yolks, onion and seasonings.
- Form meat into medium or tiny balls and brown on all sides in hot fat.
- Add flour to 4 tablespoons of fat from pan and stir until it thickens.
- Add beef broth and one cup water.
- Heat until slightly thickened.
- Strain. Add to meatballs.
- Serve with noodles.
