Rice Pudding With Dried Cherries And Currants
- Cooking spray
- 1 1/3 cups fat-free milk
- 1/8 teaspoon salt
- 1/2 cup firmly packed brown sugar
- 1 tablespoon butter or stick margarine, melted
- 1 teaspoon vanilla extract
- 1 teaspoon grated lemon rind
- 2 teaspoons thawed orange juice concentrate
- 2 large egg whites
- 2 cups cooked medium-grain rice
- 1/2 cup dried tart cherries
- 1/4 cup currants
- Preheat oven to 325u0b0.
- Coat a 1 1/2-quart baking dish with cooking spray; set aside.
- Combine milk and next 7 ingredients in a bowl; stir well with a whisk. Add rice, and stir well. Add cherries and currants; pour mixture into baking dish.
- Place baking dish into a 13- x 9-inch baking pan. Pour hot water into baking pan to a depth of 1 inch. Bake at 325u0b0 for 55 to 57 minutes or until a knife inserted in center comes out clean.
