Brunch Enchiladas
- 2 c. ground ham
- 1/2 c. sliced green onions or 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 2 1/2 c. shredded Cheddar cheese
- 8 to 10 (7-inch) flour tortillas
- 4 beaten eggs
- 1 Tbsp. flour
- 2 c. light cream or milk
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- few drops Tabasco sauce
- Combine ham, onions and green pepper.
- Place 1/3 cup mixture plus 3 tablespoons grated Cheddar cheese on each tortilla and roll up.
- Place seam side down in a greased 12 x 7 x 2-inch baking pan. Combine eggs, cream, flour, salt, garlic powder and Tabasco sauce and pour over tortillas.
- Place in refrigerator overnight.
- Bake, uncovered, 45 to 50 minutes at 350u0b0.
- Sprinkle remaining cheese on top and bake 3 additional minutes.
- Let stand 10 minutes before serving.
