Brunch Enchiladas

  1. Combine ham, onions and green pepper.
  2. Place 1/3 cup mixture plus 3 tablespoons grated Cheddar cheese on each tortilla and roll up.
  3. Place seam side down in a greased 12 x 7 x 2-inch baking pan. Combine eggs, cream, flour, salt, garlic powder and Tabasco sauce and pour over tortillas.
  4. Place in refrigerator overnight.
  5. Bake, uncovered, 45 to 50 minutes at 350u0b0.
  6. Sprinkle remaining cheese on top and bake 3 additional minutes.
  7. Let stand 10 minutes before serving.
