Fresh Vegetable Nicoise
- 1/2 lb. green beans
- 1 medium onion, cut into 6 wedges
- 1 clove garlic, minced
- 1 Tbsp. olive or salad oil
- 1 yellow pepper, cut into 8 wedges
- 1 large tomato, cut into 8 wedges
- 1/4 c. black ripe olives
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. red wine vinegar
- In microwave in a 2-quart casserole, cook green beans in 1/4 cup water, covered, on High 4 to 6 minutes or until slightly softened.
- Stir halfway through cooking.
- Drain and stir in onion, garlic and oil; cook, covered, 3 minutes.
- Stir in yellow pepper and cook, covered, 2 to 4 minutes or until vegetables are tender and crisp.
- Add tomato; cook, uncovered, 1 minute.
- Stir in olives and remaining ingredients.
- Serve hot or cold.
- Yields 4 servings.
