Fresh Vegetable Nicoise

  1. In microwave in a 2-quart casserole, cook green beans in 1/4 cup water, covered, on High 4 to 6 minutes or until slightly softened.
  2. Stir halfway through cooking.
  3. Drain and stir in onion, garlic and oil; cook, covered, 3 minutes.
  4. Stir in yellow pepper and cook, covered, 2 to 4 minutes or until vegetables are tender and crisp.
  5. Add tomato; cook, uncovered, 1 minute.
  6. Stir in olives and remaining ingredients.
  7. Serve hot or cold.
  8. Yields 4 servings.
