Buttermilk Pound Cake
- 2 sticks sweet butter
- 2 c. sugar
- 4 eggs (room temperature)
- 1 tsp. vanilla
- 2 Tbsp. lemon juice
- 3 c. flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 c. buttermilk
- confectioners sugar
- Preheat oven to 350u0b0.
- Butter and flour a 10-inch tube or Bundt pan.
- Cream butter and sugar together until fluffy.
- Add eggs, one at a time.
- Add vanilla and lemon juice; blend well.
- Sift together flour, soda, baking powder and salt.
- Add dry ingredients to creamed mixture alternately with buttermilk.
- Beat well after each addition.
- Batter should be smooth.
- Pour into prepared baking pan. If using Bundt or tube pan, bake for one hour.
- Cool on rack; unmold.
- Dust with confectioners sugar.
- Serves 8.
