Beef Tacos
- 2 lb. ground beef
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 1/2 tsp. chili powder
- 2 (4 oz.) cans chopped green chilies, drained
- 1 (7 oz.) jar roasted sweet red peppers, drained and chopped
- 1/4 c. chili sauce
- 2 tsp. sugar
- 1 1/2 tsp. salt
- 1/4 lb. sharp Cheddar cheese, shredded (1 c.)
- 2 medium tomatoes, chopped
- 1/2 medium head iceberg lettuce, thinly sliced
- taco shells
- bottled hot or mild taco sauce (optional)
- In skillet over high heat, cook ground beef, onion and garlic until all pan juices evaporated and meat is well browned, stirring frequently.
- Stir in chili powder; cook 1 minute.
- Stir green chilies, roasted red peppers, chili sauce, sugar and salt into mixture; over medium heat, heat through.
- To serve, spoon meat mixture into warm bowl.
- Arrange shredded cheese, chopped tomatoes and sliced lettuce in separate bowls for taco accompaniments.
- Let each person spoon some beef mixture into a taco shell, then top with taco accompaniments and taco sauce.
