Deluxe Blueberry Muffins
- 1-2/3 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. allspice
- 1 cup Libby's solid pack pumpkin
- 1/4 cup undiluted evaporated milk
- 1/3 cup shortening
- 1 cup packed light brown sugar
- 1 egg
- 1 cup blueberries
- 1 Tbsp. all-purpose flour
- Streusel Topping
- In a large bowl, combine flour, baking soda, baking powder, salt, cinnamon and allspice; set aside.
- In small bowl, blend pumpkin, milk.
- In large mixer bowl, cream shortening and sugar. Add egg; beat until fluffy.
- Alternately add flour and pumpkin mixtures to shortening mixture; beat well after each addition. Combine blueberries and 1 Tbsp. flour.
- Gently stir blueberries into batter and spoon into muffin cups.
- Sprinkle with streusel topping.
- Bake at 350 degrees for 35-40 minutes.
