Weight Watchers Zero Points Soup
- 1 - 2 pounds beef cubed
- 2 cans low sodium chicken broth
- 3 cups low sodium V8/tomato juice
- 2 cans Italian diced tomatoes
- 4 cloves garlic minced
- 1 whole small onion diced
- 1 package sliced mushrooms
- 3 wholes carrots peeled and sliced/diced
- 1 whole zucchini diced
- 1 whole yellow squash diced
- 2 cups fresh/frozen green beans
- 1 can kidney beans drained and rinsed
- 3-4 cups shredded cabbage
- 1/4 teaspoon salt and pepper
- 1 + teaspoons Italian seasoning
- 1 bunch kale/spinach chopped
- 1 cup celery chopped
- 1 cup parsnips chopped
- 1 teaspoon thyme leaves
- 1 whole bay leaf
- Add a little oil to pan and fry meat 5 min, add onions and garlic and add 1 Cup water and cook covered for 30 min. If not using meat in a large frying pan sprayed with cooking spray, saute garlic, onions, carrots and mushrooms for 5 min. In a large crockpot/soup pan, combine sauteed garlic and vegetables with the remaining ingredients. Cook on high for 2-3 hrs or until vegetables are cooked. If on top of stove cook 3-4 hrs so vegetables soften up.
