Fresh Salsa Chicken
- 6 ounces cherry tomatoes, quartered
- 1/2 cup finely chopped yellow bell pepper
- 2 tablespoons capers, drained
- 1 tablespoon cider vinegar
- 1 garlic clove, minced
- 3/4 teaspoon dried basil
- 1/8 teaspoon crushed red pepper
- 1 1/2 teaspoons extra-virgin olive oil
- 4 (4-ounce) skinless, boneless chicken breast halves
- Cooking spray
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat broiler.
- Combine first 8 ingredients in a bowl; cover and chill until ready to serve.
- Place chicken on a broiler pan coated with cooking spray; sprinkle with salt and black pepper. Broil 5 minutes on each side or until done. Serve tomato mixture over chicken.
