Smoked Barbecued Turkey

  1. Remove neck, giblets
  2. and
  3. clumps
  4. of
  5. fat from turkey; save giblets, discard
  6. fat.
  7. Rinse
  8. turkey inside and out; pat dry. Rub salt
  9. in
  10. cavity
  11. and
  12. over
  13. skin; cover loosely and refrigerate for 6 to
  14. 8
  15. hours,
  16. then
  17. rinse well and pat dry. Place turkey in a
  18. large
  19. plastic bag in a roasting pan.
  20. Stir together soy sauce,
  21. oil,
  22. sherry,tugar,tinger and garlic; pour over turkey, secure bag with a twist.tefrigerate for 24 hours.
