Mexican Chicken Casserole
- 1 packet Stove Top stuffing mix vegetable seasoning
- 1 packet Stove Top stuffing crumbs
- 6 boneless chicken breast halves
- 1 c. hot water
- 2 Tbsp. margarine, cut in pieces
- 1 jar salsa, divided (12 oz.)
- 1 c. shredded cheese
- Heat oven to 350u0b0.
- Mix contents of vegetable seasoning packet, water and margarine in a 12 x 8-inch baking dish until margarine is melted.
- Stir in stuffing crumbs and 1/2 cup of the salsa.
- Place chicken over stuffing.
- Pour remaining 1 cup salsa over chicken.
- Cover with foil.
- Bake for 35 to 40 minutes, or until chicken is cooked through.
- Remove foil.
- Sprinkle with cheese.
- Bake 5 minutes, or until cheese is melted.
- Let stand 5 minutes before serving.
- Makes 6 servings.
