Chocolate Raisin Bars

  1. Preheat oven to 350u0b0.
  2. Spray an 8 x 8 x 2-inch baking pan with nonstick cooking spray; set aside.
  3. In a medium bowl, using electric mixer, beat together margarine, pudding mix and sugar until combined.
  4. Beat in eggs one at a time, beating after each addition until well blended.
  5. Beat in vanilla.
  6. Add flour, baking powder and salt and beat until blended; fold in raisins.
  7. Pour batter into sprayed pan and bake for 20 minutes (until a cake tester, inserted in center, comes out clean).
  8. Remove cake to wire rack and let cool.
  9. Cut cake in half and cut each half into 6 equal bars.
  10. Yield:
  11. 12 bars.
