Sweet And Sour Baked Fish
- 1 (1 lb.) pkg. frozen flounder fillets, thawed
- 1/4 c. sliced green onion
- 1 medium clove garlic, minced
- 1 Tbsp. oil
- 1/2 c. water
- 1/4 c. bottled Indian River grapefruit juice
- 2 Tbsp. corn syrup
- 1 Tbsp. cornstarch
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 1 green pepper
- 1 medium tomato
- Arrange fish fillets in shallow 1-quart lightly oiled baking dish; set aside.
- In skillet, cook green onion and garlic in oil until just tender.
- Add water, grapefruit juice, corn syrup, cornstarch, ginger and salt.
- Cook, stirring, until thickened and smooth.
- Spoon over fish.
- Top with green pepper and tomato. Bake at 400u0b0 for 20 minutes or until fish tests done.
- Makes 4 servings, 157 calories per serving.
