Low-Fat Zucchini Bread
- 3/4 c. Egg Beaters
- 1/4 c. canola oil
- 3/4 c. sugar-free thick applesauce
- 1/2 c. each: sugar and brown sugar
- 2 tsp. vanilla
- 3 medium zucchini, grated and well drained (2 c.)
- 2 c. flour
- 1/2 tsp. baking powder
- 2 tsp. baking soda
- 1 Tbsp. cinnamon
- 3/4 tsp. salt
- 1/2 c. nuts
- 1 c. raisins (optional)
- Heat oven to 350u0b0.
- Spray 2 (5 x 8-inch) baking pans.
- In a large bowl, whisk or beat together Egg Beaters, oil and sugars. Add applesauce and vanilla and beat until sugars dissolve.
- Using a flexible spatula, stir in the zucchini.
- In another bowl, stir flour, baking powder, soda, cinnamon, salt, nuts and raisins. Stir just enough ingredients and gently stir the flour into the liquid mixture.
- Do not overbeat.
- Bake 45 to 50 minutes.
- Allow to cool in pans 10 minutes.
- Contains 98 calories, 3 grams fat and no cholesterol.
