Low-Fat Zucchini Bread

  1. Heat oven to 350u0b0.
  2. Spray 2 (5 x 8-inch) baking pans.
  3. In a large bowl, whisk or beat together Egg Beaters, oil and sugars. Add applesauce and vanilla and beat until sugars dissolve.
  4. Using a flexible spatula, stir in the zucchini.
  5. In another bowl, stir flour, baking powder, soda, cinnamon, salt, nuts and raisins. Stir just enough ingredients and gently stir the flour into the liquid mixture.
  6. Do not overbeat.
  7. Bake 45 to 50 minutes.
  8. Allow to cool in pans 10 minutes.
  9. Contains 98 calories, 3 grams fat and no cholesterol.
