Beef Enchiladas
- 2 1/2 lb. cooked ground beef
- 1 large chopped onion
- 1 pkg. taco seasoning
- 1/4 tsp. salt
- 1 (15 oz.) can tomato sauce
- sour cream (optional)
- tomatoes (optional)
- 1 c. water
- oil
- 12 corn tortillas
- 1 c. grated Colby cheese
- 1/4 c. chopped green onion
- Combine cooked ground beef, onion, taco seasoning mix and salt in pan.
- Stir in tomato sauce and water.
- Cook slowly for 30 minutes.
- Cover bottom of small frying pan with 1/4 of oil.
- Fry tortillas quickly, one at a time, on both sides.
- Drain on a paper towel and spread with 1 tablespoon of meat sauce.
- Place tortilla (sauce side down) in a 13 x 9-inch baking pan.
- Top with 1/4 cup meat mixture and roll. Continue using all tortillas.
- Sprinkle cheese, onions and remaining meat sauce.
- Bake at 350u0b0 for 10 minutes or until all cheese melts.
- Top with sour cream and tomatoes.
