Beef Enchiladas

  1. Combine cooked ground beef, onion, taco seasoning mix and salt in pan.
  2. Stir in tomato sauce and water.
  3. Cook slowly for 30 minutes.
  4. Cover bottom of small frying pan with 1/4 of oil.
  5. Fry tortillas quickly, one at a time, on both sides.
  6. Drain on a paper towel and spread with 1 tablespoon of meat sauce.
  7. Place tortilla (sauce side down) in a 13 x 9-inch baking pan.
  8. Top with 1/4 cup meat mixture and roll. Continue using all tortillas.
  9. Sprinkle cheese, onions and remaining meat sauce.
  10. Bake at 350u0b0 for 10 minutes or until all cheese melts.
  11. Top with sour cream and tomatoes.
