One-Hour Vegetable Soup
- 2 lb. stew beef
- 3 large potatoes, diced
- 2 medium onions, chopped
- 1 large can mixed vegetables
- 1 small can tiny green peas
- 1 medium can white cream-style corn
- 1 large can tomatoes
- salt and pepper
- 1 to 2 Tbsp. sugar (optional)
- Place beef, onions and potatoes in pressure cooker with enough water to maintain pressure.
- Cook under pressure for 15 minutes. Release pressure and remove cooking rack, if desired.
- Drain mixed vegetables and peas and add corn and tomatoes.
- Add salt and pepper to taste.
- Add sugar, if desired.
- Bring almost to a boil and reduce heat.
- Simmer for 30 minutes.
- This makes a fairly thick soup.
- If a thinner soup is desired, the water from the mixed vegetables and peas may be used as needed.
- Yields 12 servings.
