One-Hour Vegetable Soup

  1. Place beef, onions and potatoes in pressure cooker with enough water to maintain pressure.
  2. Cook under pressure for 15 minutes. Release pressure and remove cooking rack, if desired.
  3. Drain mixed vegetables and peas and add corn and tomatoes.
  4. Add salt and pepper to taste.
  5. Add sugar, if desired.
  6. Bring almost to a boil and reduce heat.
  7. Simmer for 30 minutes.
  8. This makes a fairly thick soup.
  9. If a thinner soup is desired, the water from the mixed vegetables and peas may be used as needed.
  10. Yields 12 servings.
