Apple Brown Betty
- 4 (1-ounce) slices bread
- 3 tablespoons butter or stick margarine, melted
- 1/3 cup granulated sugar
- 1/3 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/8 teaspoon ground allspice
- 6 cups sliced peeled Granny Smith apple (about 2 pounds)
- 1/2 cup apple cider
- 1 teaspoon grated lemon rind
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 4 cups vanilla low-fat ice cream
- Preheat oven to 350u0b0.
- Place bread in a food processor or blender; process until finely ground to measure 2 cups. Combine breadcrumbs and butter; set aside. Combine sugars and next 3 ingredients (sugars through allspice) in a large bowl. Stir in apple and the next 4 ingredients (apple through vanilla). Spoon 3 cups apple mixture into an 8-inch baking dish. Sprinkle with 1 cup breadcrumb mixture. Top with remaining apple and breadcrumb mixtures. Bake at 350u0b0 for 1 hour and 15 minutes or until bubbly. Cool on a wire rack. Spoon into 8 serving bowls; top each with 1/2 cup ice cream.
