Tomato Rice
- 3/4 cup long-grain rice
- 1 teaspoon lemon juice
- 1 cup hot water
- 2 tablespoons olive oil
- 2 tomatoes, chopped
- 1 medium-size green bell pepper, chopped
- 1 large garlic clove, minced
- 1 tablespoon chicken base*
- 1 cup hot water
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Soak rice in lemon juice and 1 cup hot water 5 minutes; drain.
- Saute rice in hot oil in a large saucepan over medium-high heat 10 minutes or until golden. Stir in tomato, bell pepper, and garlic.
- Stir together chicken base and remaining ingredients; stir into rice mixture. Cover, reduce heat, and simmer 15 minutes or until liquid evaporates (do not uncover while rice is cooking).
- Prep: 10 min., Soak: 5 min., Cook: 25 min.
- *Chicken base, a highly concentrated paste made from chicken stock, may be found with broth and bouillon in supermarkets.
