Blueberry Cinnamon Cake
- 1 c. soft butter
- 1 1/4 c. sugar
- 2 eggs
- 1 c. sour cream
- 1 tsp. vanilla
- 2 c. sifted flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 3/4 c. chopped nuts
- 1/4 c. sugar
- 1 tsp. cinnamon
- 1 3/4 c. blueberries
- Place butter, sugar, eggs, sour cream and vanilla in large bowl.
- Mix 2 minutes at medium speed.
- Add flour, baking powder and soda.
- Beat 1 minute at low speed.
- Spread 1/2 of batter in greased 13 x 9 x 2-inch baking dish.
- Mix nuts, sugar and cinnamon.
- Sprinkle half mixture over batter.
- Sprinkle half of blueberries over batter.
- Drop remaining batter in mounds on top. Sprinkle remaining blueberries and cinnamon mixture over batter. Bake at 350u0b0 for 40 minutes.
- If frozen berries are used, increase baking time.
- Very good served warm.
