Favorite Colorful Scalloped Potatoes

  1. In well-greased 1 1/2-quart casserole dish, arrange layers of potato slices, sprinkling each layer with green pepper, carrot and onion.
  2. In saucepan melt butter and blend in flour.
  3. Add milk and cook, stirring constantly, until mixture is thickened and smooth. Add parsley, seasoned with a little salt and pepper to taste. Pour over potatoes.
  4. Sprinkle with cheese.
  5. Bake covered in 350u0b0 oven for about 40 minutes, then uncover and bake until potatoes are tender and cheese is delicately browned.
  6. Serves 4.
