Favorite Colorful Scalloped Potatoes
- 4 medium-sized potatoes, peeled and thinly sliced
- 1 green pepper, shredded
- 1 carrot, shredded
- 1 medium-size onion, chopped
- 1 or 2 Tbsp. butter or margarine for flour
- 2 Tbsp. flour
- 2 c. milk (skim or other type)
- chopped parsley (fresh)
- 1/3 c. shredded cheese (American or other)
- In well-greased 1 1/2-quart casserole dish, arrange layers of potato slices, sprinkling each layer with green pepper, carrot and onion.
- In saucepan melt butter and blend in flour.
- Add milk and cook, stirring constantly, until mixture is thickened and smooth. Add parsley, seasoned with a little salt and pepper to taste. Pour over potatoes.
- Sprinkle with cheese.
- Bake covered in 350u0b0 oven for about 40 minutes, then uncover and bake until potatoes are tender and cheese is delicately browned.
- Serves 4.
