Chicken Muenster
- 6 chicken breasts
- 2 eggs, beaten
- 1 c. bread crumbs
- 2 Tbsp. parsley
- 1 tsp. garlic salt
- salad oil (for frying)
- 1/2 lb. sliced fresh mushrooms
- 1 Tbsp. butter, melted
- 2 chicken bouillon cubes
- 1 c. boiling water
- 1/2 lb. Muenster cheese
- Filet chicken and cut into bite-size pieces.
- Marinate in beaten egg for 2 hours.
- Mix together bread crumbs, parsley and garlic salt.
- Roll pieces of chicken in crumb mix.
- Fry in salad oil until lightly browned.
- Melt butter and put in bottom of large 9 x 13-inch casserole.
- Lay chicken on top.
- Cover with sliced mushrooms, then cheese slices.
- Mix bouillon cubes with boiling water.
- Pour over all.
- Bake for 35 minutes at 350u0b0.
- Serves 6 to 8.
