Hot Spinach

  1. Cook spinach as directed; drain, saving 1/2 cup of the liquid. Melt butter.
  2. Add flour; stir well.
  3. Add onion and cook until soft.
  4. Add milk and spinach liquid; add seasoning and cheese. Cook until cheese is melted.
  5. Add spinach and blend well.
  6. Put in a greased 9 x 13-inch casserole and heat until hot throughout and starts to brown around edges.
  7. This dish can be made ahead of time and heated when ready to serve.
