Pork Stir-Fry
- 1 lb. boneless pork, cut into thin strips
- 2 cloves garlic, minced
- 2 Tbsp. soy sauce
- 2 Tbsp. sherry
- 1/4 c. apple juice
- 1 Tbsp. cornstarch
- 3 green onions, sliced
- 2 c. broccoli pieces
- 1 c. shredded carrots
- dash of pepper
- 2 c. fresh bean sprouts
- Combine pork, garlic, soy sauce and sherry in a 2-quart casserole.
- Stir to coat evenly; let stand 10 minutes.
- Blend together apple juice and cornstarch; stir into pork mixture. Cover with casserole lid.
- Microwave on High for 4 to 5 minutes; stir once.
- Add onion, broccoli, carrots and pepper; do not stir. Cover and microwave for 3 to 4 minutes or until vegetables are tender-crisp.
- Add sprouts; cover and microwave for 1 1/2 to 2 minutes.
- Toss to mix
