Three Bean Chili With Baked Tortilla Chips And Fruit
- 1/2 bell pepper
- 1/4 onion (small)
- 1 garlic
- 1/4 cup canned kidney beans, rinsed & drained
- 1/4 cup canned black beans, rinsed & drained
- 1/4 cup pinto beans, rinsed & drained
- 1/2 cup canned, crushed tomatos, low sodium
- 1 teaspoon chili powder
- 1/4 teaspoon cumin
- 1 ounce low fat or non fat shredded cheddar cheese
- Rinse and chop pepper and onion; mince garlic, set aside. Coat a nonstick saucepan with cooking spray and heat on medium. Saute onion and garlic until onions are translucent, about 2-3 minutes. Add pepper to saucepan and cook for about 2-3 more minutes, stirring occasionally. Stir in beans, crushed tomatoes, chili powder and cumin; bring to a low boil, reduce heat and cover: simmer for at least 30 minutes. Sprinkle with shredded cheese and serve.
