Seafood And Sausage Stew
- 1 lb. hot Italian sausage links
- 1 medium size onion, chopped
- 1 lb. small red potatoes, each cut into halves or quarters
- 1 bay leaf
- 1 lb. large shrimp
- 1 doz. small cherrystone clams or large littleneck clams
- 4 mini ears frozen corn, thawed and each cut in half
- About 1 hour before serving, in 12-inch skillet, over medium heat, heat sausages and 1/4 cup water to boiling.
- Cover and simmer 5 minutes. Remove cover. Cook, turning sausages frequently, until water evaporates and sausages are browned, about 20 minutes. Remove sausages to paper towels to drain. Cut each sausage diagonally in half.
- Spoon off all but 1 tablespoon drippings from skillet.
- In remaining drippings over medium heat, cook onion until tender.
- Add 1 cup water.
- Over high heat, heat to boiling. Add potatoes and bay leaf.
- Heat to boiling. Reduce heat to low. Cover and simmer 15 minutes, stirring occasionally.
