New Year'S Day Black-Eyed Peas
- 16 oz. pkg. black-eyed peas
- 1/2 lb. salt pork
- 3 c. onion
- 1 bunch green onion
- 1 c. chopped parsley
- 1 c. green pepper
- 2 cloves garlic
- 2 lb. smoked sausage, cut in 1-inch pieces
- salt to taste
- red pepper to taste
- pepper to taste
- 3 dashes hot sauce
- 1 Tbsp. Worcestershire sauce
- 1 (8 oz.) can tomato sauce
- 1/2 tsp. thyme
- 1/4 tsp. oregano
- rice
- Soak peas overnight.
- Cook pork, peas and water for 45 minutes on low heat.
- Add the rest of the ingredients except for sausage. Cover.
- Cook 45 minutes to 1 hour on low heat.
- Add sausage.
- Cook uncovered 45 minutes.
- Serve over rice.
- Makes 10 servings.
