Chicken A La King

  1. Melt butter in top of double boiler over medium direct heat. Add mushrooms and saute for 5 minutes.
  2. Blend in flour, salt and pepper, then add chicken broth, cream and milk.
  3. Bring to a boil over direct heat, then put pan over simmering water and cook for 5 minutes.
  4. Add about 1/2 of hot sauce to egg yolks, mix then return sauce with yolks to remaining sauce.
  5. Stir and cook for 1 minute. Add chicken and pimento and cook until heated.
  6. Serve over hot buttered toast points, baking powder biscuits or rice or in patty shells.
