Homemade Cracker Jack
- 10 c. plain popped corn
- 1 1/2 c. peanuts
- 1/2 c. margarine
- 1 c. firmly packed light brown sugar
- 1/4 c. dark brown corn syrup (Karo light is okay)
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/2 tsp. vanilla
- Mix together the popped corn and peanuts in a large bowl or a roast pan.
- Keep warm in a 250u0b0 oven.
- Melt margarine in a 2-quart saucepan.
- Stir in the brown sugar, corn syrup and salt.
- Bring to a rolling boil, stirring constantly.
- Boil without stirring for 5 minutes.
- Stir in baking soda and vanilla.
- Quickly pour over warm popped corn and peanuts mixture while tossing until popped corn and nuts are well coated.
- Bake at 250u0b0 for 45 minutes.
- Stir every 15 minutes.
- Make sure every piece of popcorn has been moved.
- Turn out on aluminum foil.
- Store in a tight container.
