Vegetable Pitas

  1. Combine first 9 ingredients in a bowl.
  2. Toss gently; combine parsley flakes and next 6 ingredients, stir well.
  3. Add to vegetable mixture, tossing well.
  4. Spoon 1 cup vegetable mixture into each 5 pita halves, reserving remaining pita half for another use.
  5. Sprinkle with cheese; cut each pita half in half.
  6. Makes 5 servings.
