Vegetable Pitas
- 3 Tbsp. unsalted peanuts
- 1 1/2 c. torn leaf lettuce
- 1 c. thinly sliced cucumber
- 1 c. diced tomato
- 2/3 c. raisins
- 1/2 c. thinly sliced celery
- 1/2 c. torn romaine lettuce
- 1/3 c. shredded carrot
- 1/3 c. chopped onion
- 1/4 c. shredded Cheddar cheese
- 2 Tbsp. mayonnaise
- 2 Tbsp. parsley flakes
- 2 Tbsp. plain yogurt
- 1 tsp. Dijon mustard
- 1/4 tsp. paprika
- 1/8 tsp. ground red pepper
- 1/8 tsp. black pepper
- 3 (7-inch) pita rounds, halved
- Combine first 9 ingredients in a bowl.
- Toss gently; combine parsley flakes and next 6 ingredients, stir well.
- Add to vegetable mixture, tossing well.
- Spoon 1 cup vegetable mixture into each 5 pita halves, reserving remaining pita half for another use.
- Sprinkle with cheese; cut each pita half in half.
- Makes 5 servings.
