Minestrone(From 1975 Edition)
- 1/4 c. Wesson pure vegetable oil
- 1 clove garlic, minced
- 1 c. chopped onion
- 1 c. chopped celery
- 2 (6 oz.) cans Hunt's tomato paste
- 1 (10 1/2 oz.) can beef broth
- 2 1/2 qt. water
- 1 c. chopped cabbage
- 1 (10 oz.) pkg. frozen peas and carrots
- 2 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. rosemary leaves
- 1 (1 lb.) can kidney beans, not drained
- 1 c. small elbow macaroni
- grated Parmesan cheese
- Cook garlic, onion and celery in Wesson oil in large kettle. Stir in Hunt's tomato paste and next 7 ingredients.
- Bring to boil; cover and simmer slowly for 1 hour.
- Add remaining ingredients, except cheese.
- Cook for 15 minutes more.
- Garnish with Parmesan cheese.
- Serves 6.
