Beef Or Chicken Enchiladas
- 1 12 package flour tortillas
- 1 10 oz. can enchilada sauce
- 1 can refried beans
- Small onion
- Cheddar cheese, grated or grate your own
- 1 lb. hamburger or 1 pkg chicken breasts, cut up in small pieces
- Cook meat with diced onion until thoroughly cooked (frying pan on stove).
- Drain.
- Add 1/4 can enchilada sauce to meat and simmer 5 minutes.
- Take off stove and place in bowl.
- Heat refried beans in microwave until hot.
- Grate cheddar cheese.
- Heat tortillas according to package directions (on stove in frying pan with 1 teaspoon oil).
- Fill tortillas with meat mixture, a teaspoon or so of refried beans and cheese. roll and place in 13 x 9 pan.
- Usually 8 to 12 per pan.
- Cover tortillas lengthwise with remaining sauce and bake at 350 degrees for 30 minutes.
- Serve with sour cream & salsa.
