Creamy Chicken & Sundried Tomates
- 4 chicken breasts, cut in bigger pieces
- 2 cups organic chicken broth
- 1/2 cup organic heavy cream
- 3 tablespoons butter
- 1/4 cup Parmesan cheese
- 1/3 cup sundried tomatoes, julienne cut packed in oil
- 1/4 teaspoon black pepper
- 1 1/2 teaspoons salt
- 1/2 teaspoon oregano
- 2 garlic cloves, minced
- 10 basil leaves, finely chopped
- Combine all ingredients except fresh basil in a medium stock pot and mix well.
- Bring to a slow boil over medium low heat, stirring often.
- Once boiling, reduce heat to low, and cook for about 6-7 minutes until the chicken is cooked through.
- Sprinkle with fresh basil, mix well. rnThe chicken shreds easily when it's done.
