Fruit Slice
- 1/4 c. butter
- 1 c. sugar
- 3 eggs (save egg white of 1 egg to be used later)
- 2 sq. (1 oz. each) unsweetened chocolate, melted
- 3 c. sifted flour
- 3 tsp. baking powder
- 1/4 c. milk
- 3 Tbsp. rum flavoring
- 1 tsp. vanilla
- 3/4 c. chopped nuts
- Cream butter and sugar until light and fluffy.
- Add eggs, one at a time, beating thoroughly after each addition.
- Beat in chocolate.
- Add sifted dry ingredients in thirds, alternately with the milk and flavoring, beating until smooth after each addition. Stir in nuts.
- Using 2 buttered jelly roll pans, spoon batter in 4 rows, the length of the pans (2 rows in each pan).
- Arrange batter together in nice even strips, about 2-inches wide.
- Beat egg white with fork and brush some over each row, being careful not to spill over onto pan.
- Sprinkle some sugar lightly over top.
- Bake in 375u0b0 oven for 20 minutes.
- Frost if you wish.
- Cut in diagonal slices.
- Makes about 36 slices.
