Japanese Persimmon Cookies
- 1/2 c. honey
- 1/4 c. butter
- 1/4 c. oil
- 1 egg
- 1 c. persimmon pulp
- 1 tsp. baking soda
- 1 c. chopped nuts
- 1 c. raisins
- 1/2 tsp. salt
- 2 c. whole wheat flour
- 1 tsp. cinnamon
- 1/4 tsp. each nutmeg and powdered cloves
- Preheat oven to 350u0b0.
- Cream together honey, butter and oil. Beat
- egg

- add.
- Prepare persimmon pulp by cutting persimmon
- in
- half.
- Scoop out the pulp, removing any seeds, and break up the fruit with your fingertips.
- Dissolve baking soda
- in pulp.
- Combine
- persimmon with honey mixture. Stir nuts,
- raisins and salt into flour.
- Add cinnamon, nutmeg and cloves.
- Stir
- dry ingredients
- into
- wet
- ones.
- Drop by heaping teaspoons
- onto oiled cookie sheets.
- Bake 20 minutes. Makes 3 dozen.
