Gazpacho(Makes 6 Servings)
- 4 c. cold tomato juice
- 1 small, well minced onion
- 2 c. freshly diced tomatoes (using plum Italian tomatoes adds to flavor)
- 1 c. minced green pepper
- 1 diced cucumber (pickling cucumbers are particularly good)
- 2 scallions, chopped
- 1/4 c. freshly chopped parsley (definitely use fresh)
- juice of 1/2 lemon
- juice of 1 lime
- 1 tsp. honey
- 1 clove crushed garlic
- 2 Tbsp. wine vinegar
- 1 tsp. tarragon
- 1 tsp. basil
- 2 Tbsp. olive oil (you can cut down significantly; when I make 1 1/2 times the recipe, I only use 1 Tbsp.)
- dash of ground cumin
- dash of Tabasco sauce
- salt and pepper to taste
- Combine all ingredients and chill for at least 2 hours.
- It can be pureed, too, if you like a less "chunky" soup.
