Chocolate Chip Cookies
- 1 c. sifted all-purpose flour
- 1/4 c. unsifted whole wheat flour
- 1/2 tsp. baking soda
- 1/4 c. unsalted margarine
- 1/4 c. granulated sugar
- 1/4 c. firmly packed light brown sugar
- 1 large egg
- 1 large egg white
- 3 tsp. vanilla extract
- 1 (1 oz.) sq. semi-sweet chocolate, grated fine
- Preheat the oven to 375u0b0.
- In a small bowl, combine the all-purpose flour, whole wheat flour and baking soda;
- set aside. In the large bowl of an electric mixer, beat the margarine, granulated sugar and brown sugar at moderately low speed for 2 minutes or until smooth and creamy, then beat in the egg, egg white and vanilla extract.
- Using a wooden spoon, mix in the dry ingredients and grated chocolate. Drop the dough by rounded teaspoonfuls onto ungreased baking sheets, spacing the cookies about 2-inches apart. Bake for 8 to 10 minutes or until lightly browned around the edges.
- Remove immediately to wire racks to cool.
- Makes about 36 cookies.
