Chili
- 1 (28 oz.) can crushed tomatoes
- 1 can red kidney beans, drained
- 1/2 lb. ground beef, browned and drained
- 1/2 lb. sweet Italian sausage, browned and drained
- 1 small onion, chopped
- 1 green pepper, sliced
- 1 carrot, peeled and sliced
- 1 yellow summer squash, sliced
- 1 small can chopped chili peppers
- 2 cloves garlic, crushed
- 2 tsp. chili powder
- 1 c. beer
- 1 Tbsp. cooking oil
- Place cooking oil in large pot or Dutch oven and add onion and garlic.
- Cook until onion is translucent.
- Add the remaining ingredients and bring to a boil.
- Cover and simmer 1 hour. Garnish with Cheddar or Monterey Jack cheese and sour cream. Serve with tortilla chips.
